Salt is the Ritz-Carlton, Amelia Island's fine-dining room, and it is the most formal restaurant on the island.
What it is
A resort fine-dining room on the island's south end, at the Ritz-Carlton's oceanfront property in the Summer Beach district. The register is the one that name implies: an ambitious kitchen, a wine programme, a dining room built for a long evening, and service to match.
The resort also runs Coast, a more casual oceanfront option, which is one of very few places on Amelia Island where you eat with an actual Atlantic view — rarer here than visitors expect, because the dune line blocks it almost everywhere else.
The trade-off, stated plainly
You are inside a resort for the entire evening. There is nothing walkable outside the gate, and downtown Fernandina Beach — twenty-plus independent kitchens in eight blocks, the working shrimp docks, the waterfront rooftops, the sunset over the river, and a Victorian street to walk afterwards — is a ten-to-fifteen-minute drive north.
That is not a criticism of the restaurant. It is the decision you are making when you book it. A resort fine-dining evening and a downtown evening are different holidays, and both are legitimate; picking by accident is the mistake.
Who should book it
Special occasions, where the room and the service are part of the point.
Resort guests for whom a fifteen-minute drive after a day on the beach with children is the wrong idea.
Anyone who wants the island's most technical cooking. Downtown has ambitious kitchens; this is a different tier of resource.
Who should drive north instead
Anyone on a two- or three-night trip. Downtown is a large part of what makes Amelia Island distinctive, and spending a short visit inside a resort means missing the island.
Concours week
The Amelia Island Concours d'Elegance in March is centred on this resort and the adjoining golf course. During that week the whole south end is at capacity and the restaurants with it — book far ahead or eat elsewhere.
Practical notes
Reservations, obviously, and well ahead for a holiday or Concours week.
Dress code. Resort fine-dining rooms have them. Ask when you book rather than finding out at the door.
Resort restaurant line-ups change — rooms get renamed, reconcepted and closed for refurbishment, and we have not confirmed the current position at this property. Check with the resort before planning an evening around a specific restaurant name you read somewhere, including here.
What we do not publish
Prices, tasting-menu costs or wine-list figures we have not confirmed. Ratings, ours or anyone else's — this site carries no review scores in its pages or its structured data, and a build check enforces that. See our editorial policy.
Getting there and back
The Ritz-Carlton is on its own oceanfront parcel off Amelia Island Parkway in Summer Beach. If you are staying downtown and eating here, plan the return: ride-share coverage on the island is thinner than in a city, particularly late.
